I know that the holy month of Islam is coming up on the 20th of this month. I know that from sun-up to sun-down there is to be no drinking, no eating, no smoking, no chewing gum, and no maritals. What I am wondering is should there be some sort of prayer done before eating when the sun does go down, and before the sun comes up?

As-salamu 'alaikum wa rahmatu Allahi wa barakatuh
By prayer, I assume you mean supplication/dua and not Salah. No, there is no mandatory dua except you have to say Bismillah (in the name of Allah) before breaking your fast, as usually when you eat.
There are opitional duas which you can say before and after breaking your fast:
