In Islam, it is not a must to change your previous name once you convert to Islam unless if it has bad meaning.

As-salamu 'alaikum wa rahmatu Allahi wa barakatuh
That's correct. For example, if your name is 'Abdul-Uzza which means slave of al-Uzza, then you must change it. There are other names besides ones that denote worshipping another being.

Is it improper to use fathi as a name? I just ask because I wanted to go with fathi as a name since it was the closest in arabic to my legal name, Vincent thus it would feel like I was embracing Islam by using the Fathi while still keeping my identity if that makes any sense
Abdullah Fathi will be a good name IMO. And there is nothing wrong with the word Fathi as a name. Your intention is also good. Keep up the Islamic spirit. <3

It's especially nice since my dad still doesn't know... if I run into a friend who calls me "Amna" instead of those who call me "Amanda"... I just tell him he's getting old

(We have that teasing sort of relationship)

When I write, I write under my initials S.M. and my last name. And no that last name is not Stirling for anyone who has read that author's work.

It isn't compulsory to change your name when you decide to be a Muslim - Shannon is fine. It is only when your name has a bad meaning that you should change it to a good meaning because:I haven't really considered changing my name yet. In some ways I'm trying to put it off since my name does mean something to me, being Shannon. Besides I wouldn't know what to change it to.

Narrated AbudDarda': The Prophet (peace_be_upon_him) said: On the Day of Resurrection you will be called by your names and by your father's names, so give yourselves good names. (Abu Dawud Book 41, Hadith 4930)
