Chicken Stew

Assalamualaikum,

Hello, everyone, how are you? Still following my cooking class? :D

Maybe some of you wonder why I posted many recipes here. Well, I like cooking so wanna share it with others. Maybe one of you need a halal recipe and wanna try something new.

Now I bring you, people, one of my most favorite food : Chicken  Stew! So tasty, really. You should try it at least once! ;)

 


CHICKEN STEW

Prep time:  15 mins

Cook time:  45 mins

Total time:  1 hour

Serves: 4

 

Ingredients
  • 2 tablespoon oil
  • 1 lemongrass, bruised and knotted
  • 800 gram chicken (about 8 pieces)
  • 300 gram potato (about 3 potatoes), peeled and cut into 8 wedges per potato
  • 1 liter water
  • 100 ml sweet soy sauce
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground white pepper

Grind the following into spice paste

  • 5 shallots
  • 5 cloves garlic
  • 1 inch ginger

Garnish

  • deep fried shallot flakes


 

Instructions
  1. Heat oil in a pot and sauté spice paste and lemongrass about 3 minutes.
  2. Add chicken pieces and stir until well coated with the spice
  3. Add potatoes,water, sweet soy sauce, salt, sugar, nutmeg, and white pepper into the
    pot and bring to a boil. Reduce heat and simmer until chicken and
    potatoes are cooked and tender, about 30 minutes. Adjust with salt and
    sugar as needed.
  4. Turn off heat. Transfer to a serving bowl, garnish with with shallot flakes and served immediately

Assalamualaikum,

This is a local recipe in my area, Sister :D Even in my house, we usually don't include potato, but most people do, so I put potato here. You can try it and compare this recipe to yours. I am confident enough that this recipe tastes good, though ;)

Waalaikumsalam,

A famous chef once told me that the mix of sugar and salt will replace MSG (monosodium glutamate) in our dish. And MSG does make our dish more delicious but it is bad for our health that's why sugar and salt are used. But sometimes people mix sugar and salt for different reason like to make the food's taste balanced or make an unique taste combination. This dish tastes rather sweet but delicious. Maybe that's why.

Thanks sister for the explanation.

Btw, MSG is not at all bad for health, and its all natural extract, usually from molasses. Actually, salt is 5 times toxic compared to MSG.
